Acclaimed chef Charlie Palmer is elevating Paso Robles’ culinary scene with a bold reimagining of the food and beverage programs at two of the city’s most iconic hotels. At the historic Paso Robles Inn, the current Steakhouse will be transformed into The Pass—a signature dining destination set to debut in 2026. Meanwhile, the beloved Cattlemen’s Lounge, a local favorite since the 1940s, will reopen this summer as Cattlemen’s Bar, paying homage to the region’s ranching heritage with a refreshed concept and atmosphere.
Just steps away, the Piccolo, the Inn’s stylish sister property, will see its popular rooftop bar Tetto rebranded as Salina. Also opening in late summer, Salina will offer woodfired pizzas, craft cocktails, and sweeping views of downtown in a lush garden setting.

Allegretto Vineyard Resort is a Tuscan-inspired luxury resort that opened in 2015, offering guests an immersive wine country experience just minutes from the area’s premier wineries.
The Ava Hotel, a 151-room Curio Collection property, is set to debut in summer 2025 with four stories of accommodations designed to reflect the natural beauty of the region through layered textures, earthy tones, and warm woods. The property will feature a rooftop pool and bar, three unique restaurants, and over 3,000 square feet of flexible event space including the Tablas Ballroom and Rooftop Terrace.
